Beer Can Chicken

Prep Time: 15 minutes
Cook Time: 1 hours, 30 minutes
Ingredients:

* 1 whole chicken (4-5 pounds)
* 1 12 ounce can beer (room temperature)
* 2 cloves garlic, minced
* 2 sprigs fresh rosemary
* 2 teaspoons olive oil
* 1 teaspoon dried thyme
* 1/2 teaspoon red pepper flakes, crushed
* Juice of 1 lemon
* For Rub:
* 1 teaspoon paprika
* 1 teaspoon salt
* 1 teaspoon fresh rosemary, chopped
* 1 teaspoon dried thyme
* 1/2 teaspoon black pepper, ground
* 1/2 teaspoon lemon zest

Preparation:
Combine all rub ingredients in a small mixing bowl. Set aside.

Remove giblets and the neck from chicken. Sprinkle all over with rub, including cavity. Open can of beer and discard half of it. Place, minced garlic, rosemary, thyme, lemon juice, and pepper flakes in it. Make sure to pierce two more holes on the top of beer can. Place chicken on top of can.

Preheat grill. Place birds grill balanced by the beer cans. Grill over indirect medium heat for 1 1/2 to 2 hours until internal temperature of thigh is 180 degrees. Remove chicken when finished cooking and let sit (with beer can still intact), for 10 minutes before carving.

TIP:Put the bird in a pan before putting it on the grill and then we plug up the neck hole on the bird with a small potato. The potato helps keep the steam inside the bird to make it extra juicy and the pan catches any juices to keep the grill a little cleaner. BONUS - the potato bakes at the same time for a yummy side dish! Also, with about 30-45 minutes of cook time left, we'll add some chunked up veggies (potatoes, carrots, sweet onions) to the bottom of the pan. Just season them with salt and pepper, coat them in olive oil, and dump them in. The juice that drips down from the chicken give them a great flavor! Enjoy!"

Ingredients
Part1
* 1 1/2 cups normal flour
* 3/4 cup white sugar
* 1 tsp salt
* 1 tsp baking soda
* 1/3 cup cocoa powder
Part 2
* 1/2 cup oil
* 1/2 cup milk
* 1 tsp vanilla
Part 3
* 2 egg yolks
* 1/2 cup milk
Part 4
* 2 egg whites
* 1/2 cup sugar
Directions
1. Sift Part 1 together
2. Pour in Part 2, mix well
3. Add Part 3 and set aside
4. Using Part 4 ingredients - beat egg whites till stiff, and gradually add sugar
5. Fold egg white mixture into the chocolate mixture
6. Bake at 175C for 45 minutes or until done

* If you make fresh lemon juice put a little bit of salt to make it  taste nicer.

  • When shrimp curl into a semi-circle they're done. When They're tightly coiled,they're overdone.
  • To make ketchup (tomato sauce) come out of the bottle easier,insert a drinking starw and push it to the bottom,then remove. The air that is admitted will start an even flow.
  • Add two (2) tablespoons of vinegarwhen boiling eggs to keep them from cracking.
  • To prevent black rings from developing around the yolk of boiled eggs,immerse the eggs immediately in cold water after boiling.
  • To keep creamy salads, dressing or fillings from becoming watery or soupy, add 1 1/2 tsp. unflavored gelatin to every 2 cups mixture.
  • If zucchini is not available, increase the quantity of the other vegetables like caulyflower,eggplant, and carrot.     
  • Clams, crabs, shrimps, and other shelfish have their own cooking time. They should be cooked quickly to preserve the sweet delicate flavor.
  • To remove fishiness and to add flavor to chicken,shrimp, and fish, soak or simmer in pineapple juice or syrup for a few minutes,or add to your marinade.
  • Boil potatoes with a little vinegar in the water to form a light crust.This helps potatoes hold their shape when combined with other ingredients.
